Probably I found the solution for your problem.
Go to  tools --> Options --> OpenOffice.org --> Security, there is something called options push button. Click on it and check the option "Recommended Password protection on saving"
Now you can protect your document using passwords

But it worked sometimes and sometimes not. :(

(I felt kword more stable than OO Document.)
