All the linux distribution are stable if you are using a stable production release of a kernel. Currently Redhat supplies 2.4.xx kernel and Debian gives 2.2.xx.
Distribution doesn't make a system insecure. It and application running as daemon makes a system insecure. So keep your daemons (ftp, http, etc..) up2date.
I feel Debian systems are easiest to upgrade if you have a net connection.
