Iptables is a packet filter. Antivirus systems are application layer IDS systems for one specific type of intrustion. Totally different things. If you want reliable virus protection, the correct fix is to use an OS which needs a lot of user interaction to allow incoming viruses.
What are you trying to achieve? Filter incoming viruses through mail? http://www.isj.si/software/amavisd/
