For production, it is advisable to stick to the 'baap' of *buntu, that is Debian. Debian stable is the ideal one. Debian unstable is what goes into *buntu. It is like a beta software. Install both the desktops ( KDE and Gnome) and their developer tools. That way your system has the advantage of both the environments.
