Or do the display managers work exclusively as in Gnome by default uses gdm whenever you log into gnome and kde uses kdm whenever i log into KDE?

Yes, everything works under everything else. Just set up a proper Xsessions file for gnome and your KDM will see it and vice versa. This is why standardisation matters. The standard here is the X protocol.
