Ummm, choice is good. You define your corporate requirements and choose the best software for the purpose. Linux+OpenOffice+Mozilla+Gnome/KDE+Jabber+Courier-Imap+Postfix/Qmail+ OpenLDAP+Samba+OpenSSL+OpenSSH+Squid+Amavisd-new should take care of most of your computing needs.
As for the application requirements, well, if your users like emacs, thats their choice, but some may even like vi.
