The best place ( if you are comfortable with the C code ) is to look in the sources.
A good and available book is "Understanding the Linux Kernel" but it talks only about 2.2 with mention of possible changes in 2.4
Since 2.4 has been out for long, the book is not up-to-date, but still is helpful.
