We cannot use unstable releases. We will need to use stable releases.
The list of packages in Knoppix is available at: http://sunsite.rediris.es/mirror/knoppix/packages.txt
We can add/remove packages from it.
Lets check whether we can do it with Gnome 2.2. If not then we will have to opt for Gnome 2.
Gnome 2 was very buggy and unstable. suggest you stick to the standard knoppix distro. Changing packages and distributing the cd without thorough testing that too to newbies would be a horrible thing to do.

I agree with terrence here. Those who are trying out linux for the first time should experience as less problems as possible. Other if there are problems with packages, This mighr mar their first tryst with Linux. We want to attract people to Linux and FS/OSS not make them bother with the internal workings right away. Just my 2 paise.

So we keep the original composition of the knoppix distro. Also I would like everybody to suggest more packages which can be included with the distro. We can free up space by removing packages which are not needed. e.g. the packages for italian, chinese etc language support :-)). Let's make this as good as possible for the user.
If you want to know the packages that come with the default Knoppix distro check out:

How about keeping the distro as it is and at the same time including gnome2.2 and kde 3.1 sources for the non newbies so that they have the option of compiling and installing it if they want?

I agree with terrence's warning. But keep exploring the way of updating it to 2.2 gnome so that localization issues could also be handled. We will give our own custom CD some other time, not now without proper R&D and testing.

Updating to Gnome 2.2 would have a cascading effect on a lot of other packages which would then need to be upgraded.

Fine :-))
