Is it possible to monitor the activities on my server, for any traffic moving in and out of my server? Can i monitor and block some of the mails, frm domains like yahoo, hotmail, moving thru my server?

Yes. tcpdump, mail rules, ipchains rules.
Which SMTP server are you using?
Use squid with ACLs configured.

RH Powertools CD has a lot of utilities to monitor network traffic and other related stuff.

I guess you can write some rules to your proxy server what to allow and what not to allow.
