The Simple End User's Linux (seul), education branch has just come out with #57 of its Linux in Education report. Available at http://www.seul.org/edu/report57.html, it covers several case studies, software for use in schools, and also a complete linux distribution for schools (kmLinux). Also featured are tools for course management.
Worth a read.
